Mix 1/2 cup bread crumbs, 1/4 tsp salt, 1/8 tsp pepper, and 1/8 tsp paprika. Rinse 1 1/2 lb. sea scallops and roll thoroughly in bread crumb mixture. In a skillet, heat 1/2 cup butter until frothy. Put scallops in the skillet and saute till lightly browned.

Gently place scallops on a plate. Add 1/4 cup white wine to butter in skillet and boil gently for 1 minute, stirring. Pour the sauce over scallops. Serve with a side of rice. This recipe makes four servings of fried scallops.
