Grease or butter 12 muffin cups and place in oven to preheat at 450 °F. Carefully remove from oven and fill each cup with batter about 3/4 full. Bake at 450 °F for 20 minutes, then reduce the heat 350 °F and continue baking until golden brown and puffed.

Having removed the popovers from the oven, carefully make a small hole in the top of each so that steam can escape.
