To celebrate this food related holiday, try your hand at cooking delicious raspberry cream pie. It is not so hard to make as you might think. First, you need to make the crust. Combine 1 1/2 cups crushed wafers, 1/3 cup chopped pecan nuts, and 1/4 cup melted butter. Grease a 9-inch pie plate and press the crust onto the bottom and up the sides of the plate.
In a bowl, beat 8 ounces cream cheese, 2/3 cup confectioner's sugar, 2 tbs orange liqueur, and 1 tsp vanilla extract until light and fluffy. Whip 1 cup heavy whipping cream and fold whipped cream in cream cheese mixture. Spread filling into crust and chill.
In a saucepan, combine 1 cup sugar and 3 tbs cornstarch. Stir in 3 tbs water and 1 1/2 cups fresh raspberries. Bring to a boil. Cook until thickened, stirring. Refrigerate until chilled. Spread raspberry topping over the pie and garnish with 1 cup fresh raspberries.
