Sift together 3 3/4 cups all-purpose flour, 1 tsp baking powder, and 1/2 tsp salt. In a separate bowl, beat 8 ounces softened unsalted butter and 2 cups sugar until light and fluffy. Beat 2 eggs one at a time, then add 1 tbs vanilla extract. Add flour mixture and mix at low speed.
Knead the dough until smooth and pat into a flat disk. Wrap the dough in plastic and chill in the fridge until firm enough to roll. Roll out the dough and cut the cookies using cookie cutters.
