One possible reason Cabernet Sauvignon became popular so quickly is that it is relatively easy to cultivate. This grape variety thrives in various climates and soils. It buds late, making it more resistant to frost, as well as has good resistance to many, though not all, grape diseases. For these reasons, Cabernet Sauvignon is grown in most major wine-producing countries.

The flavor profile of Cabernet Sauvignon depends on the terroir, but it tends to be full-bodied with high tannins and noticeable acidity. Cabernet Sauvignon grown in cooler climates is known for its green bell pepper notes. This grape variety is also known for its affinity for oak, which softens its naturally high tannins and complements its tobacco and blackcurrant notes.

Cabernet Sauvignon can be used to make varietal and blended wines. In blends, it typically adds tannins, structure, and complexity. Cabernet Sauvignon is famously part of the “Bordeaux blend”, which may also include Cabernet Franc, Malbec, Merlot, Petit Verdot, and Carménère. It can also be blended with Sangiovese, Shiraz (Syrah), Tempranillo, and other red wine grape varieties.

Depending on their tannin profile, alcohol level, style, and the desired effect (i.e., whether one wants to soften or highlight the tannins), varietal Cabernet Sauvignon wines can be paired with different foods. Classic food pairings with Cabernet Sauvignon include grilled or roasted meats, hard cheeses such as Cheddar, Gouda, Gruyère, and Parmesan, mushroom dishes, and dark chocolate desserts. Generally, it is recommended to avoid pairing Cabernet Sauvignon with spicy foods or blue cheeses, although mildly spiced dishes such as steak au poivre are acceptable.

International Cabernet Sauvignon Day was created in 2009 by American marketing specialist and Cabernet enthusiast Rick Bakas. According to Bakas, the holiday’s main purpose is to bring the international Cabernet community together, as Cabernet Sauvignon doesn’t need to be made more popular. Bakas chose the Thursday before Labor Day as the date, but outside of the United States, International Cabernet Sauvignon Day is usually celebrated on August 30.
